Paneer Tikka

Smoky tandoor-style grilled cottage cheese marinated in spiced yogurt. India's favourite vegetarian starter.
Ingredients
- 400g Paneer, cubed
- 1 cup Thick curd (hung curd preferred)
- 1 tbsp Ginger-garlic paste
- 2 tsp Red chilli powder
- 1 tsp Chaat masala
- 1 tsp Cumin powder
- 1/2 tsp Turmeric
- 2 tbsp Mustard oil
- 1 Capsicum and onion, cubed
- to taste Salt and lemon juice

Mix hung curd with all spices, mustard oil, ginger-garlic paste and salt. This is your marinade.

Add paneer cubes, capsicum and onion to marinade. Coat well. Refrigerate 30-60 minutes.

Thread onto skewers alternating paneer, capsicum and onion.

Grill on a hot pan or oven grill at 220°C for 15-18 minutes, turning midway.

Once charred spots appear, remove and sprinkle chaat masala.

Serve hot with mint chutney, lemon wedges and onion rings.

- 💡Hung curd (strained overnight) makes the coating stick better
- 💡Mustard oil adds authentic tandoor aroma — don't substitute
- 💡For oven: broil last 3 minutes for proper char
